Peanut Butter Cup Cookies

Ingredients:
1.75 cups all-purpose flour
0.5 teaspoon salt
1 teaspoon baking soda
0.5 cup butter, softened
0.5 cup white sugar
0.5 cup peanut butter
0.5 cup packed brown sugar
1 egg, beaten
1 teaspoon vanilla extract
2 tablespoons milk
40 miniature chocolate-covered peanut butter cups, unwrapped
Directions:
- Preheat your oven to 375°F (190°C). In a bowl, sift together the flour, salt, and baking soda; set aside for now.
- In another bowl, cream together the softened butter, white sugar, peanut butter, and brown sugar until the mixture is light and fluffy. Beat in the beaten egg, vanilla extract, and milk until combined.
- Gradually add in the flour mixture and mix until everything is well combined and forms a dough.
- Scoop out the dough and shape it into 40 little balls. Pop each one into an ungreased mini muffin pan.
- Bake the cookies in your preheated oven for about 8 minutes.
- As soon as they come out of the oven, gently press a mini peanut butter cup into the center of each cookie. Let the cookies cool a bit before carefully removing them from the pan.
