Peanut Butter Fudge


1 cup unsalted butter (2 sticks)
1 cup creamy peanut butter
1 teaspoon vanilla extract
3 ¾ cups powdered sugar
Optional Toppings:
Chopped peanuts
Chocolate drizzle
Sea salt flakes


Prepare the pan:

Line an 8×8-inch square baking pan with parchment paper, leaving some overhang for easy removal.


Melt butter and peanut butter:

In a medium saucepan, combine butter and peanut butter.
Cook over medium heat, stirring frequently, until the mixture is smooth and fully melted (about 2–3 minutes).


Add vanilla and sugar:

Remove the saucepan from heat and stir in the vanilla extract.
Gradually add the powdered sugar, stirring until the mixture becomes thick and smooth. You may need to use a spatula to combine everything well.


Spread and set:

Pour the mixture into the prepared pan, spreading it evenly with a spatula.
Optional: Sprinkle chopped peanuts, drizzle with melted chocolate, or sprinkle with sea salt flakes for extra flavor and texture.


Chill:

Refrigerate the fudge for 2–3 hours, or until it is firm.


Cut and serve:

Keep the fudge in an airtight container at room temperature for up to 1 week, or in the refrigerator for up to 2 weeks.


Store:

Use the parchment overhang to lift the fudge out of the pan.
Cut into squares and serve.
